Ingredients

5 (approx. 1250g) potatoes (pic.1)
150g-200g eggless mayonnaise (pic.2)
20g non-dairy powdered coffee creamer
1 (approx.170g) apple, peeled and diced (pic.3)
80g veggie ham, diced (pic.4)

     
Seasonings:

½ tsp salt
Some white pepper

Directions

Slice peeled potatoes into thin pieces, steam till soft and smash thoroughly. Add coffee creamer, salt, white pepper and eggless mayonnaise and stir evenly. Finally, add diced apples and veggie ham and mix well.

If eggless mayonnaise is not available, you can make your own by following the directions below:

 
Ingredients

150cc water
2 ½ tbsp cornstarch
4 tbsp non-dairy powdered coffee creamer
2 tbsp sugar
¼ tsp salt
5 tbsp lemon juice (or to taste)

Directions

(1) Boil 120cc water in a pot over high heat. Add coffee creamer, sugar, and salt and stir well.

(2) Mix corn starch and the remaining 30cc of cold water in a small bowl and pour into (1). Lower heat, add lemon juice and continue to stir mixture for at least 2-3 minutes until smooth (but not too watery) and thick. Once mixture begins to bubble, remove from heat. Serve when cool. (pic.5)
