1 cup sugar
cup vegetable shortening
cup applesauce
1 Tablespoon of finely ground flaxseeds whipped with 1/4 cup of water
2 cups flour
cup chopped walnuts
1 teaspoon baking soda
4 soft, ripe bananas, mashed
2 loaf pans (8 in x 3 in)


Preheat oven at 325°F. Cream sugar and shortening; add applesauce, ground flax seeds with water, flour, soda, bananas, chopped nuts and mix well. Greased and floured the loaf pans. Greased and floured the pans. Pour banana bread batter into 2 loaf pans; bake at 325°F for about 1 hour and 15 minutes, or until a toothpick inserted in center comes out clean. This banana nut bread recipe makes 2 medium loaves
