1 cups of sugar (brown or white or golden) (Pic 1)
1 cup of oil (Soya or olive oil) (Pic 2)
2 cups of flour (wholemeal self raising) (Pic 3)
2 cups of zucchini, washed and grated (Pic 4)
1 carrot, grated (Pic 5)
1 cup of walnut pieces (Pic 6)

Seasonings (Pic 7)
2 tsp of vanilla extract
1 tsp of salt
2 tsp of vanilla flavoured sugar
1 tsp of baking powder
2 Tbsp of vanilla syrup or honey or maple syrup
1. In a mixing bowl, combine 1 cup oil (Pic 8) and sugar (Pic 9). Mix well. (Pic 10)

2. Add flour (Pic 11) and stir even. (Pic 12) Fold in zucchini shreds (Pic 13), and mix well.

3. Add 1 tsp salt (Pic 14), 1 tsp baking powder (Pic 15), 2 tsp vanilla sugar (Pic 16), 2 tsp vanilla extract (Pic 17), 2 Tbsp vanilla syrup (Pic 18) and add grated carrot (Pic 19). Stir and mix until even.

4. Add walnut pieces (Pic 20) and mix well (Pic 21). Prepare a baking pan of proper size, greased and floured. Pour the mixture into the pan (Pic 22) and smooth out the surface. (Pic 23)
5. Preheat the oven at 170°F. Bake for 20 minutes and reduce the heat to 155/160°F and continue to bake for one hour. (Pic 24)
