  Ingredients

Some eggless pasta or brown rice
1 red pepper
1 yellow pepper
1 green pepper
7-8 olives
1 large avocado
7 pieces marinated sun-dried tomato
7 pieces marinated artichoke or other vegetable
Some pine nuts, pumpkin seeds or other seeds
Some black pepper powder
2 tbsp olive oil
1 tsp salt
Soy sauce to taste

Directions

(1) Cook pasta or brown rice and allow to cool down.
(2) Roast pumpkin seeds in a non-stick pan over low heat as when making popcorn. Set aside for later use.
(3) Chop vegetables into pieces. Add seeds, olive oil, soy sauce, salt and black pepper to vegetables and mix. Then add pasta and mix with vegetables. Serve (fresh lemon juice may be squeezed on top and fresh basil or parsley leaves used for garnish when serve).


Preparation time for this dish is no more than ten minutes and it hardly involves any “cooking” – an ideal choice for single or busy people who want an easy-to-prepare but good quality meal.
