(1) Cook pasta or brown rice and allow to cool down.
(2) Roast pumpkin seeds in a non-stick pan over low heat as when making popcorn. Set aside for later use.
(3) Chop vegetables into pieces. Add seeds, olive oil, soy sauce, salt and black pepper to vegetables and mix. Then add pasta and mix with vegetables. Serve (fresh lemon juice may be squeezed on top and fresh basil or parsley leaves used for garnish when serve).
