1 inner cabbage head
2 pieces tofu
� onion
1 large lemon
2 tablespoons sugar
� teaspoon salt
100g (3.5 ounces) raw peanuts
2 tablespoons vinegar
2 tablespoons orange juice
Red chili, mint
Directions
� From a cabbage head, Extract the inner white part of a head of cabbage. Shred the inner cabbage into thin pieces. Clean by soaking in water. Strain the water out.
� Fry the 2 pieces of tofu until golden yellow. Slice into pieces.
� Shred the onion into thin pieces. Soak in vinegar and water. Strain.
� Mix the cabbage, tofu, and onion pieces. Place in a large dish or plate.
� Toast raw peanuts until golden yellow. Crush peanuts and put on top of the plate with mint.
Salad Sauce
� Extract the juice from the lemon. Add sugar, salt, minced chili, and orange juice. Mix well until sauce is consistent (so salt and sugar have dissolved).
� Before eating, pour the sauce onto the salad and toss well.
